How about blacksmithing, woodworking, and mining rather than prospecting?
Short descriptions of each would also be helpful (what you do to increase the level, what it gives you as you increase in level).
Farming- grow and harvest crops to increase level, boosts the average number of item drops per harvest of each item.
Fishing- increase by fishing, increases chance at any moment of catching a fish.
Hunting- kill animals to increase, increases attack damage when attacking animals + increases zoom of bow, and at higher levels gives night vision.
Woodcutting- increase by breaking wood, gives haste while breaking wood.
Mining- increase by mining ore, gives haste while mining ore.
Fighting- fight sword on sword to increase, gives strength when fighting.
Woodmanship- I dunno how this would work...
Riding- increase by riding horses, increases speed/skill of horses being ridden and decreases time to tame horses.
Blacksmithing- smelting and crafting certain items to increase, speeds up smelting and opens new items to craft.
Woodworking- increase by crafting certain items, opens new items to craft.
For the last two, the idea is that you can't craft certain items unless you are at a high enough level.
That's just my ideas about the skills... Also, when you start and want a profession, I think that all levels should be at 1, but you can make either two skills be at level 2 or one skill be at level 3 when you start, and write whatever you want as your profession. This would be very flexible for almost anything you want as your profession.
